Preparation
- TrufflesFlat casserole. Melting butter. Add truffles in slices or strips. Heat without blackening the butter, let it release its aroma.
- ScrambleBreak the eggs in. Season with salt and pepper. Stir over low heat with a wooden spoon until suitable thickness.
- FinishAdd double cream. Serve surrounded with croutons of bread fried in butter.
- VariationsSame method for eggs with asparagus, mushrooms, ham, etc., provided the garnish is cooked beforehand.
Reboul's text
Put into a flat casserole a piece of butter the size of an egg, melt it and throw in 3 or 4 fine truffles cut into slices or strips; let them heat without however letting the butter turn black; when they begin to release their aroma, break into it 5 or 6 eggs, season with salt and pepper and stir over low heat with a wooden spoon.
When you judge them cooked, that is to say of a suitable thickness, add 2 tablespoons of double cream and serve, surrounded with croutons of bread fried in butter.
One may, by the same method, prepare eggs with asparagus tips, with mushrooms, with ham, etc. It is enough that the garnish be cooked beforehand.
