  1. CookingCook the sole as described for sole with white wine, letting it cook 2 minutes less.
  2. Preparing the dishButter a gratin dish, lay the sole on it, arrange a few mushrooms around it and a few truffle slices on top, coat with a gratin sauce having added to it the cooking liquid of the sole.
  3. Browning au gratinSprinkle with breadcrumbs, drizzle with melted butter and brown au gratin.
  4. ServingSqueeze the juice of a lemon over it and serve.
