Spiny lobster with remoulade sauce

Preparation

  1. Preparing the court-bouillonPut 2 to 3 litres of water in a saucepan with 2 onions and 2 carrots in slices, peppercorns, thyme, bay leaf, a handful of salt and a glass of vinegar. Bring to the boil.
  2. Cooking the spiny lobstersPlunge the spiny lobsters into it and cook for the time needed according to their size, about 30 minutes for each pound of their weight.
  3. FinishingWhen taking them out, make a small incision in the middle of the tail. A liquid escapes from it that would help it spoil should one wish to keep it a few days.

Reboul's text

Put 2 to 3 litres of water in a saucepan with 2 onions and 2 carrots in slices, peppercorns, thyme, bay leaf, a handful of salt and a glass of vinegar. Bring to the boil.
