Estoumagado is the feminine past participle of the verb estoumaga, the equivalent of French "estomaquer", except that in Provence it means "to shock, to distress" rather than "to astonish". The underlying image, shared by both languages, is feeling strong emotions in the stomach, here nervous shocks. A variant, une estomagade, also exists under the influence of French estomac. The Provençal word estouma often refers to the whole chest, heart included, which reinforces the meaning.
